Apple Upside Down Cake

When I was younger there were a lot of Pineapple Upside Down Cakes baked in my house, and every time they were so delicious. So after I realized that there are other kinds of fruits that would taste good flipped upside down on a cake, I set out to find some of the best. This is definitely one of them.


 I started with a basic version I found on line, and after much experimentation I have created this! 

Ingredients:
  • 3 gala apples (peeled and sliced)
  • 1 1/2 stick unsalted butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar, plus a little extra for sprinkling!
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon, plus some for sprinking!
  • 1 teaspoon nutmeg, plus some for sprinking!
  • 1 cup buttermilk
  • 2 cups flour
Directions:
  • Begin by preheating the oven to 355 degrees.
  • Melt a little over a half a stick of butter in a pan, and after it's melted pour it into a 9x9 baking pan. Sprinkle the 1/2 cup of brown sugar over the butter in equal portions. After that, sprinkle a little bit of cinnamon and nutmeg over the brown sugar.
  • Pull out a mixing bowl; whip together the buttermilk, eggs, sugar and other 1/2 stick of melted butter until smooth.
  • Put 2 cups of flour into a measuring cup, and then put the one teaspoon of cinnamon, nutmeg and baking soda into the cup as well. Begin to slowly add the dry ingredients to the wet ingredients.
  • Mix until smooth, but make sure to not over mix it or your cake will be very holey!
  • Pour the cake batter into the pan over the brown sugar.

The next part was not a part of the original recipe, and it means adding more butter and brown sugar. You can decide whether or not to add it, it makes it unhealthier but much, much more delicious! So if you decide to go with the unhealthier version read below, if not skip to the last couple steps!

  • So, you have decided to add more sugar and butter, good for you! After you emptied the batter into the pan, pour 1/2 stick of melted butter over the batter and spread out evenly.
  • Now sprinkle some more brown sugar over the top of the cake, as well as some cinnamon and nutmeg. Because the top of the cake will get so much heat, it will cause the brown sugar and butter to harden; making a really good chewy bottom to the cake.
  • Place the cake in the oven for 55 minutes.
  • When the cake is ready to be taken out of the oven make sure you have a large enough plate to put it on, because you are going to have to flip the cake onto the plate right after you take it out of the oven.
  • Make sure to put the plate over the pan before you flip it, it will make it much easier. Some of the apples might stick to the pan, but you can just add them back onto the cake, no worries :)



    Flipping the cake is a little tricky, but if you manage to do it, it gives you a cake that is both chewy and sweet, but also very pretty to look at!
